What kind of wine is it
Gerardo Cesari's Amarone della Valpolicella Classico is a red wine from the historical Valpolicella area made with Corvina Veronese, Rondinella, and Rossignola grapes. The style is structured and complex, with a full body and balanced elegance. Fermentation takes place in temperature-controlled stainless steel, followed by 36 months of ageing, partly in Slavonian oak casks and partly in French oak barriques and tonneaux. Manual grape selection and traditional drying define a harmonious and precise organoleptic profile.
Where it comes from
The grapes come from vineyards in the municipalities of Negrar, Marano di Valpolicella, Sant’Ambrogio, Fumane, and San Pietro in Cariano, in the heart of the Valpolicella Classica.
How it is produced
The grapes, hand-harvested in crates, are rested in a drying room, allowing the sugar concentration to rise naturally. Fermentation lasts between twenty and thirty days, with maceration on the skins in temperature-controlled stainless steel. After malolactic fermentation, the wine matures for 36 months, of which 12 in Slavonian oak casks and part in French barriques and tonneaux. This process gives structure and aromatic complexity.
Tasting notes
In the glass, it appears deep purple-red with garnet hues. The nose offers a broad bouquet, with candied cherry, ripe plum and dark berries, enriched with vanilla, cocoa and subtle toasted notes. The palate is full, warm and enveloping, with well-integrated soft tannins, a balance between acidity and substance, and a long finish. The overall impression remains harmonious and invites attentive tasting.
Best pairings
This Amarone accompanies game dishes such as wild boar or venison ragout and grilled red meats. It is ideal with rich stews and braised dishes, where balanced tannins enhance the depth of the sauce. Among local pairings, it is perfect with Veronese-style pasta and beans, and with polenta and porcini mushrooms. A Veneto classic remains Vicenza-style beef stew.
