Amarone della Valpolicella Cascina San Vincenzo is a red wine that best expresses the character of Valpantena and the commitment of the Pasqua family to sustainable viticulture. It is made from vineyards cultivated according to the principles of organic farming, growing on limestone-clay soils that provide structure and elegance. The blend consists of Corvina, Corvinone, and Rondinella, varieties that impart aromatic complexity and great aging potential.
The grapes are hand-harvested in mid-September and left to dry for about three months, losing 25-30% of their weight and concentrating aromas and structure. After crushing, fermentation takes place in steel for about 25-30 days with frequent pump-overs to extract color and tannins. This is followed by malolactic fermentation in French oak barrels, where the wine matures for 18-20 months before further aging in bottle for four months.
In appearance, it presents an intense garnet red color. The bouquet is rich and enveloping, with notes of sour cherry, tobacco, leather, dark chocolate, and vanilla. On the palate, mature berry aromas emerge alongside delicate smoky hints, accompanied by velvety tannins and a lively freshness. The finish is long, persistent, and harmonious.
This Amarone pairs perfectly with braised meat dishes, game, and aged cheeses, enhancing their structure with its intensity and complexity.
