Amarone della Valpolicella Cecilia Beretta is a red wine made from selected grapes from the hills of Valpantena, in the Valpolicella area. It is produced using the appassimento process, which concentrates the components of the grapes and results in a structured and complex profile, with well-present and integrated tannins. Extended fermentation, malolactic fermentation in barrique, and maturation in wood complete an intense yet balanced style, with a deep and persistent sip.
Where It Comes From
The grapes come from a hilly area of Valpantena, a part of Valpolicella that expresses a direct link between the grape variety and the land. The limestone-clay soils provide structure and complexity, contributing to a firm character and clear definition. Careful selection of the bunches is central to the wine’s identity and to a profile that reflects the local character and a measured, precise intensity.
How It Is Produced
Vinification starts with drying the best bunches for two or three months on wooden racks, a phase that increases sugar concentration. This is followed by a fermentation of about twenty to twenty-five days, designed to promote extraction and complexity. Malolactic fermentation takes place in barrique, after which the wine matures in wood for eighteen months and refines in bottle for six months, thus perfecting balance and continuity on the palate.

On the nose, you can detect balsamic notes, ripe blackberry, and aromatic herbs, with a defined and persistent profile. The palate entry is enveloping and the structure is full, supported by vigorous but well-integrated tannins. Crisp wild berries accompany a long and pleasant finish, with a harmonious progression that maintains depth right through to the end.

It pairs naturally with grilled red meats, game, and aged cheeses, thanks to its intensity, structure, and persistence, which support flavourful dishes. The tannic texture and enveloping sip accompany rich preparations and important cooking methods, helping maintain balance throughout the tasting.
