Description
The Amarone della Valpolicella from the Collezione del Conte of Villa da Filicaja originates from the vineyards in the municipalities of San Pietro in Cariano and Negrar, in the province of Verona.
It is produced from the typical Amarone blend: predominantly Corvina Veronese, followed by Corvinone, Rondinella, and Croatina. The grapes are hand-harvested and subjected to a period of drying. Fermentation takes place in steel over 50 days, following 30 days of maceration on the skins. The wine ages for 30 months in Slavonian oak barrels and for an additional 3 months in the bottle before being marketed.
It is characterized by an intense ruby red color with garnet reflections. The nose is complex and intense, with notes of red fruit alternating with elegant spicy hints. On the palate, it shows balance and good tannins, supported by a remarkable structure.
Excellent for pairing with braised dishes and game, it pairs well with all aged cheeses.
