What kind of wine it is
Outer Limits CGM by Montes is a red wine from the Colchagua Valley, in the Apalta subregion, made from Carignan, Grenache, and Mourvèdre. The winemaking process involves spontaneous fermentation at low temperatures and aging divided between egg-shaped concrete vats and stainless steel to maintain freshness and aromatic integrity. The result is a medium-bodied style, with polished tannins and a balanced structure, boasting a fruity and spicy profile that clearly reflects the local terroir.
Where it comes from
The grapes come from hillside vineyards in Apalta, in the heart of the Colchagua Valley. The parcels are located on terraces with slopes over 45% and south-east exposure, conditions that favor even ripening and preserve acidity. The soils, of granitic origin with clay and broken rocks, limit vine vigor and increase fruit concentration. The Mediterranean climate, influenced by the ocean and significant temperature swings, enhances freshness and aromatic precision.
How it is produced
Harvesting is manual using crates and follows a double berry selection so only healthy fruit is used. After destemming, the grapes flow by gravity into the fermentation tanks, minimizing mechanical extraction. Fermentation occurs spontaneously with native yeasts at low temperatures, followed by a maceration on the skins to obtain controlled color and tannin. Aging for 12 months takes place half in egg-shaped concrete vats and half in stainless steel, a choice that enhances purity and texture.
Tasting notes
Shows an intense carmine red color with lively highlights. The bouquet centers on ripe red and blue fruits such as raspberry, black cherry, blackberry, and blueberry, with jammy notes and a sweet spiciness of cinnamon and nutmeg. On the palate, it is vibrant, with soft tannins and a medium body supported by good acidity. The finish is long and persistent, with fruity and spicy returns highlighting the balance between structure and freshness.
Food pairings
This wine pairs well with roast red meats with mushrooms, where succulence and earthy notes harmonize with the wine's fruit and spice. It also works with Bolognese lasagna thanks to its acidity, which cleanses the palate of fat. In Chilean cuisine, it suits grilled asado, while among traditional dishes, empanada de pino makes for a coherent match thanks to the meat, onion, and spices aligning with the tannic texture.
When to serve it
It's a versatile red suitable all year round, ideal for those seeking intensity and precision without excessive oak. Serve at 16–18 °C in large glasses. A brief decanting can enhance dark fruit and spice notes. Thanks to soft tannins and good freshness, it is enjoyable even young, but can develop greater complexity in the bottle over time without losing liveliness. The optimal drinking window is in the coming years, with good aging potential if stored appropriately.
