Banyuls AOC Capbéart vin doux naturel Paul Herpe et Fils
Description
Paul Herpe & Fils' Banyuls Capbéart was born in vineyards located in the municipalities of Banyuls sur Mer, Collioure, Port Vendres and Cerbère, in the Languedoc-Roussillon area, home of French gastronomic and wine traditions.
It is produced with 100% Grenache grapes, harvested entirely by hand. Fermentation takes place in stainless steel tanks at controlled temperature, then interrupted by adding neutral alcohol followed by maceration in contact with the skins for 28 days. Subsequently the wine ages for 6-7 years in the same containers, before being bottled.
It has an orange-red color with ocher reflections. The nose opens with intense aromas of ripe red fruits, followed by elegant notes of chocolate, kirsch cherries and roasted coffee. On the palate it is sweet and consistent, with a pleasant sapidity.
Excellent as a dessert and chocolate pairing, it is ideal in combination with foie gras or to be served as an aperitif.
