Description
The Barbera D'Asti Cavale ' from Cantine Sant'Agata is born in vineyards located in Scurzolengo, in the province of Asti, in the heart of the extraordinary Piedmontese wine panorama. Cantine Sant'Agata wines are the perfect expression of the native vines of Piedmont. The name Cavale 'derives from the dialectal expression that indicates the surname of the Cavallero family. For this reason, Cavale 'encompasses all the experience handed down over the years from father to son.
It is produced exclusively with Barbera grapes. After a soft pressing, the grapes ferment in contact with the skins in stainless steel tanks at a controlled temperature of 28-30 ° C for 14/16 days, with daily punching down. Subsequently the wine ages in barriques for 18 months, and for further 4 months in bottle.
Cavale ' is characterized by a red color tending to purplish. The nose opens with a rich bouquet, with enveloping aromas of cherries and marasca cherries, enriched with pleasant spicy notes of vanilla. On the palate it has a broad structure and a delicate tannic density.
Perfect to accompany risotto and first courses, it is ideal in combination with red meats and roasts.
