Barolo Cerequio by Batasiolo is a still red wine made from Nebbiolo grapes grown in the Langhe. It is created to express finesse and structure with an elegant and full profile, dense yet smooth tannins, and good depth. Fermentation takes place in temperature-controlled stainless steel, after which the wine matures in Slavonian oak barrels, then in steel and bottle, resulting in broad aromatic complexity and solid aging potential.
Where it comes from
This Barolo comes from the Langhe region in Piedmont, from the historic Cerequio cru. Favorable exposures and strong temperature swings between day and night preserve the aromatic qualities of Nebbiolo and define the tannins. The marl-calcareous soils of the area provide a solid tannic structure and allow for slow, steady ripening of the grapes.
How it is produced
The Nebbiolo grapes are carefully harvested and destemmed. Fermentation occurs in temperature-controlled stainless steel vats, with skin maceration for 10-12 days and regular pumpovers to extract color and phenolics. After fermentation, the wine is aged in Slavonian oak barrels, then stabilised in steel and continues aging in the bottle, resulting in a softer tannic structure and a richer aromatic profile.
Tasting notes
Barolo Cerequio displays an intense garnet red color with reflections tending towards garnet over time. The nose offers a clear and complex bouquet with flowers, ripe fruit, balsamic notes, tobacco, and coffee alongside discreet spices. On the palate, it is structured and elegant with silky tannins, lively acidity, and long persistence that echoes the aromas.
Food pairings
The structure and tannins of Barolo Cerequio make it ideal for red meats and aged cheeses. It pairs well with roasted meats, game, hearty mushroom dishes, and important grilled cuts. It shines in Piedmontese cuisine with brasato al Barolo, tajarin with meat ragù, and mixed boiled meats with traditional sauces, supporting rich and full-flavored recipes.
When to serve
This Barolo is suited for special occasions and meat-based dinners. Serve at about 18°C in a large glass, and consider brief aeration before pouring to bring out its bouquet and achieve a more harmonious sip. The structure and tannic profile allow for significant cellar aging, and the wine offers a wide and evolving drinking window.
