Description
Elio Altare's Barolo is a wine produced in the areas of La Morra, Castiglione Falletto, Serralunga d'Alba, and Barolo, made from Nebbiolo grapes sourced from vineyards with an average age between 20 and 30 years. The soils have varied compositions and the exposures are mainly south and southeast, elements that help define a complex and representative expression of the Langhe territory.
Vinification takes place through maceration on the skins in a rotofermenter at controlled temperature for several days, allowing for precise and balanced extraction. The wine then ages in used French barriques for an extended period, developing elegance, aromatic depth, and a harmonious tannic texture.
To the eye it appears a bright ruby red with garnet reflections. Elegant notes of red fruit emerge on the nose. On the palate it is warm and refined, with great elegance and a clean finish reminiscent of violet, supported by subtle yet smooth tannins.
It pairs perfectly with important dishes from traditional cuisine such as braised meats, game, and aged cheeses.
