Description
A Barolo that comes to life from 40-year-old vines located in Novello and from a clayey-calcareous soil with sandy veins. Vinification in steel tanks with the maceration of the marc for 13 to 17 days. The fermentation temperature is controlled and maintained around 28-30 ° C. Finally, it ages for 24 months in large Slavonian oak barrels, 12 months in steel tanks and 6 months in bottle.
A powerful, austere and extremely elegant wine. The color appears intense garnet, while the nose is intoxicated by fragrant sensations of rose, violet and rhubarb which with age evolve into spicy notes of black pepper and truffle. The mouth is imposing, balanced and with a very persistent finish.
A splendid organoleptic profile, the most suitable wine to accompany noble dishes based on beef, preferably grilled. Try it with a truffle polenta.
