Description
Giovanni Canonica's Barolo Paiagallo is one of the most loved labels by purists of the great wines of the Langhe, produced by a vigneron who manages a few hectares of vineyards in the Cru Paiagallo, west of the village of Barolo. It is produced in an artisanal way, with extreme care and passion, starting from the highest quality grapes.
Fermentation takes place with indigenous yeasts in oak vats. According to the ancient custom of the territory, the wine ages for over 3 years in large Slavonian oak barrels and in concrete tanks.
It is a great traditional Barolo with a classic profile. In the glass it has a garnet color with aromas of morello cherries, hints of undergrowth, spices and balsamic nuances of officinal herbs. The sip is long and intense, with an important tannic texture, a rich fruit, a fresh and persistent finish.
To be combined with braised meats and stewed game.
