The Nebbiolo vines sink their roots into soils formed by the clayey-silty marls of Sant’Agata Fossi and the yellowish sandstones of Diano d’Alba. How it is made
The process starts with temperature-controlled fermentation in cement using native yeasts. This is followed by meticulous submerged cap maceration for about a month, which is essential to gradually extract color and phenolics. The wine matures in large barrels for thirty-six months, then completes its balance with a slow bottle refinement for another two years.
