Description
This Chardonnay from Domaine de Montille originates in the "Les Aigrots" climat, located at the foot of the Beaune slope on clay and marl-limestone soil with a gentle slope. The name of the place is thought to derive from the Latin term "Argifolium," linked to the presence of butcher's broom. This parcel, just 0.49 hectares, is cultivated according to certified organic practices and complemented by biodynamics, producing generous and fruity wines with a broad and accessible profile even in their youth, a typical expression of the delicacy and richness of the Beaune terroir.
After a light débourbage, the must ferments and undergoes malolactic fermentation in barrels, some of which are new and made from Allier oak with a light and prolonged toasting. The wine is aged for about a year on fine lees, followed by a period in stainless steel vats (4-6 months) to preserve its tension and freshness.
The aroma is intense and fragrant, with hints of yellow fruit, citrus, and a sweet touch reminiscent of pastry. On the palate, it is notable for its roundness and lively freshness, enriched by a saline vein that stimulates the palate. The whole is very balanced, harmonious, and particularly appealing even in its youth.
Perfectly paired with delicately structured yet flavorful fish dishes, such as sole fillets in butter and baked sea bream with herbs.
