What kind of wine is it?
Bourgogne Aligoté from Pierrick Bouley is a still white wine made from Aligoté grapes grown in Burgundy. Its style is characterized by taut freshness and a mineral touch, with a focus on aromatic clarity and easy drinkability. Fermentation starts in tank and continues in barrique, after which the wine matures, gaining structure without losing agility. This approach yields a linear white wine, suitable for immediate drinking or short-term bottle evolution.
Where does it come from?
The grapes come from the “En Coulézin” plot, a small 0.29-hectare parcel oriented north-south within the Bourgogne Aligoté area. Marl and clay soils retain moisture and give the wine acidic tension and a saline note. In this zone, Aligoté expresses rigorous freshness and aromatic precision that reflect the territory.
How is it produced?
Harvesting is done by hand in small crates, with careful selection on a vibrating sorting table to include only the best bunches. The winemaking process aims to preserve both aromatic integrity and varietal typicity. The must ferments initially in tank and then in barrique, where the wine ages for about 12 months. After racking, the wine stabilizes and, if necessary, is filtered before bottling to maintain a clean and defined profile.
Tasting notes
In the glass, it shows a bright straw yellow color, with pale highlights and good transparency. The nose reveals notes of citrus such as lemon and grapefruit, hints of white fruit, and a minerality reminiscent of marl soils. The palate is dry and lively, with well-integrated acidity and a streamlined texture. The wood aging adds slight volume without weighing it down. The finish is clean, savory, and persistent, with citrus echoes and a refreshing sensation.
What does it pair with?
Pairs easily with grilled fish, shellfish, and briny dishes such as oysters, thanks to freshness and sapidity that cleanse the palate. Excellent also with fresh or lightly aged goat cheeses, where the wine’s acidity balances the creaminess. Also interesting with trout tartare or citrusy seafood salads.
When to serve it?
Ideal as an aperitif, for fish-based lunches, and light dinners, whenever a defined and dynamic white is desired. Serve chilled, in white wine glasses to enhance aromas and minerality. Enjoyable immediately for its directness, but can evolve for a few years in bottle, developing more complex nuances without losing tension.
