Description
This Chardonnay from Domaine de Montille comes from two plots located in the commune of Puligny-Montrachet, cultivated according to certified organic practices and complemented by biodynamics. It is a cuvée that authentically introduces the style of the historic Burgundy estate, offering a taste of the elegance and purity of their wines, even at the more accessible levels of the Bourgogne appellation.
Vinification begins with a gentle pressing followed by a light setting. The must ferments in barrels, where both alcoholic and malolactic fermentations take place. No new barrels are used, preserving the freshness and precision of the fruit. After a year in wood, the wine is aged in stainless steel for 4-6 months before filtration and bottling.
The aroma is delicate and fresh, with notes of citrus, crunchy apple, and yellow fruit. On the palate, it is linear and mineral, with a well-defined structure that highlights the concentration of the wine and enhances its vibrancy. The result is a balanced, bright, and harmonious white.
Ideal with cold vegetable-based appetizers or with light dishes of steamed white fish.
