The Bourgogne Chardonnay Vieilli en Fût de Chêne from Labouré-Roi is crafted from a skillful blend of grapes sourced from various Burgundian terroirs, stretching from Yonne to Mâconnais. The limestone hills and marl and granite influences provide ideal conditions for Chardonnay cultivation, contributing to the wine's complexity. The aim is to unite the freshness of northern wines with the structure of southern Burgundy and the finesse of the Côte d'Or.
The winemaking process involves a careful selection of grapes, gentle pressing, cold settling, and fermentation in stainless steel tanks under controlled temperatures. 50% of the wine ages on fine lees in steel for 6-8 months, while the other 50% matures in oak barrels for the same period. The blending of the two lots precedes bottling, providing a balance between freshness and wooded structure.
With a straw-yellow color and green reflections, the nose reveals a fresh aromatic profile with citrus notes, yellow-fleshed fruit, and a hint of minerality. The palate is broad and generous, dominated by citrus and fresh fruit flavors, with a slight buttery note due to the wood aging. The persistence is long, with a tonic and harmonious finish.
It pairs perfectly with Comté savory pies, cold cuts, pig feet, seafood, or cheeses like Beaufort.
