Description
Vulcanus Maceración Carbónica by Encomienda de Cervera is an organic red wine made from Syrah grapes grown in the volcanic region of Macizo Volcánico del Campo de Calatrava, in Almagro, Spain. The volcanic soil, rich in clay, gives the wine a strong territorial identity, enhanced by careful and environmentally respectful winemaking. It is an authentic expression of the terroir, combining the energy of volcanic land with the delicacy of artisanal vinification.
The vinification follows the traditional carbonic maceration method, a now rare technique that involves fermenting whole grape clusters in cement vats. This approach, coupled with the hand harvesting of grapes, enhances varietal aromas and the freshness of the fruit while maintaining good structure and aromatic complexity.
In the glass, it presents a medium intensity cherry red color with vivid violet reflections. On the nose, it offers great aromatic intensity, dominated by fruity notes of ripe strawberry and currants, accompanied by elegant floral scents of rose and blue flowers. On the palate, it is fleshy, balanced, with mature tannins and a silky texture, closing with a long fruity finish that leaves a pleasant persistence.
Ideal pairing with fresh cheeses, elaborate salads, and vegetable-based stews.
