Description
Garnacha La Viña de Ayer is a red wine produced by SotoManrique in the historic vineyards of Cebreros, in the Sierra de Gredos. It is made from bush-trained Garnacha plants, cultivated between 800 and 1060 meters above sea level on granite and schist soils, surrounded by pine trees. The yields are very low, benefiting fruit concentration and expressiveness.
After manual harvesting in crates, the grapes are cooled to 0°C and vinified in concrete vats with spontaneous fermentation. Depending on the batch, various proportions of whole clusters are used. After fermentation, the wine ages for 12 months in French oak barrels before the final blending and bottling with light filtration and a low sulfite content.
In the glass, it presents a bright and clear ruby color. On the nose, it reveals aromas of fresh red fruits and delicate floral touches, fully reflecting the varietal typicity of Garnacha. On the palate, it is fresh, vertical, and juicy, light but with excellent persistence and lively acidity.
Perfect when paired with grilled white meats, light charcuterie, or flavorful vegetable-based first courses.
