Description
Las Violetas is a red wine produced by SotoManrique in a unique area of Cebreros, in the Sierra de Gredos. It is made from bush-trained Garnacha vines, grown at an altitude of 950 meters on poor granite soils, in a unique environmental context that contributes to the expressiveness and identity of the wine.
Fermentation occurs spontaneously in concrete vats, with 15% of the grapes vinified as whole clusters, at a controlled temperature between 18 and 26°C. This is followed by 14 months of aging in oak barrels. Malolactic fermentation occurs naturally and bottling is done with light filtration and very low levels of sulfites.
In appearance, it is a bright cherry color with medium-low intensity. The nose offers intense floral and spicy notes with a Mediterranean character. On the palate, it has good intensity and body, accompanied by a finesse and elegance that promise excellent evolution over time.
It pairs well with Mediterranean cuisine, light roasts, or aged cheeses.
