Description
The Chablis Grand Cru Valmur by Labouré-Roi comes from one of the seven most prestigious climats of Chablis, in the heart of northern Burgundy. This cru covers 11 hectares in a valley between the vineyards of Vaudésir, Grenouilles, and Les Clos, characterized by Kimmeridgian soils rich in fossils and varying exposures and altitudes that bring complexity and expressiveness to the wines. Its proximity to the Serein Valley contributes to an ideal microclimate for cultivating Chardonnay.
After a slow pressing, the must was cooled and allowed to settle before the start of alcoholic fermentation in steel. After three days, 30% of the juice was transferred to fine-grained barrels to complete the fermentation, while the remaining stayed in steel at a controlled temperature. The malolactic fermentation was completed, and the wine was aged on fine lees for 18 months, adding roundness and aromatic depth.
The color is a bright golden yellow. The nose is dominated by freshness and minerality, with intense hints of citrus peel and verbena. On the palate it balances perfectly between liveliness and softness, with aromas of custard and citrus, closing with an elegant finish and a subtle smokey note.
It is ideal with raw seafood, fish such as salmon or turbot, foie gras or white meats in creamy sauce.
