Description

Olivier Leflaive's Chablis Les Deux Rives is a white wine made from Chardonnay grapes grown in the Chablis region of Burgundy, where the vineyards flourish on Kimmeridgian clay-limestone soils, rich in marine fossils that give the wines their distinctive character and minerality. The plots are located on both banks of the Serein river, contributing to an expressive balance between freshness and structure.

The winemaking process involves gentle pressing and a static settling phase, followed by alcoholic and malolactic fermentation. Ageing mainly takes place in stainless steel, with an initial stage in wood, to preserve the aromatic purity and the typical mineral tension of the appellation.

On the nose, it reveals aromas of crisp white fruit accompanied by elegant mineral notes; on the palate it is precise and taut, with vibrant freshness and a clean, savoury finish that invites another sip.

It pairs perfectly with fish dishes, shellfish and delicate seafood preparations.
