Description
The Chablis Premier Cru Vaillons by Maison Ropiteau Frères comes from one of the most renowned climats in the south of Chablis, with a total area of about 200 hectares. The Chardonnay grapes used specifically come from the terroirs of Beugnon and Roncières, where vines with an average age of 45 years offer clusters of great concentration while maintaining the freshness and balance typical of the appellation.
The vinification takes place in temperature-controlled stainless steel vats to preserve the aromatic integrity of the fruit. This winemaking approach aims to enhance the purity of the Chardonnay and maintain a fresh and straightforward style, also suitable for long bottle aging thanks to the wine's structure.
In appearance, it has a medium golden color, clear and bright. The nose is broad and complex, with notes of vanilla, mocha, and exotic fruit. On the palate, it is full and fruity, with dominant hints of yellow fruit like pear and apricot, a long and caressing finish with an almost sweet touch of honey.
It pairs perfectly with fish dishes in creamy sauce, pike, lobster, or fresh cheeses.
