Description
The Chablis Terroir de Chichée by Patrick Piuze is produced from Chardonnay grapes grown on a plateau near Vaucoupin, in the commune of Chichée, on Kimmeridgian limestone-marl soils. The vines, some of which are quite old and harvested manually, are selected from high-quality plots managed by Piuze in collaboration with local winegrowers.
The winemaking process takes place in steel with spontaneous fermentation on indigenous yeasts, followed by aging on fine lees without clarification or filtration. In this typical style of Piuze, no new barrels are used.
In the glass, it presents with light straw reflections; on the nose, citrus (lime, grapefruit), pear, white peach, and marine notes of flint and oyster shell emerge, with a hint of honey and hawthorn. On the palate, it reveals itself as fresh and vibrant, with crisp acidity, deep minerality, and a long, well-balanced, sapid finish.
Perfect with shellfish, seafood, or fatty fish in delicate preparations.
