Description

The Champagne Blanc de Blancs Grand Cru “Hors Série” by Chartogne-Taillet is made exclusively from Chardonnay grapes sourced from the prestigious chalky soils of Avize, in the Côte des Blancs. This rare and limited cuvée is crafted from vineyards rooted in friable chalk and calcareous colluvium soils, which impart an extraordinary purity of expression and a strong sense of place to the wine.

Vinification takes place through spontaneous fermentation in barrels and demi-muids, without aggressive clarification, in order to preserve the integrity of the fruit and the terroir. The wine is aged for a long time on fine lees without filtration, with minimal dosage, developing complexity and depth thanks also to an extended maturation period.

On the eye, it reveals a pale, crystalline gold color, animated by a fine and persistent perlage. The bouquet is precise and refined, with notes of candied lemon peel, green apple, white flowers, and an elegant hint of fresh hazelnut, accompanied by chalky undertones. On the palate it is linear and vibrant, with a taut structure and a pronounced mineral imprint that stretches into a long, saline, and remarkably pure finish.

It pairs perfectly with caviar, trout roe, sea bream sashimi, seafood risottos, and lemon tarts.
