Description
Champagne Blanc de Blancs Brut is produced by the Maison Champagne Barons de Rothschild, founded in 2005 from the union between the three branches of the noble family (Château Mouton Rothschild, Château Clarke, Château Lafite Rothschild). The Chardonnay grapes all come from Grand and Premier Crus, mainly from Avize, Le Mesnil-sur-Oger and Oger, in the Côte des Blancs.
The Chardonnay grapes undergo alcoholic fermentation in small stainless steel vats at a controlled temperature for 25 to 60 hours, followed by malolactic fermentation. The wine ages on the fine lees for 6-7 months. This is followed by the sparkling process according to the champenoise method and aging on the lees for at least 3 and a half years.
The Champagne has a straw yellow color, with a fine and constant perlage. On the nose there are hints of exotic fruit, followed by citrus and dried fruit notes, brioche and toasted almonds. On the palate it is clean and vertical, with a saline and persistent finish.
Excellent in combination with seafood and seafood cuisine.
