Description
Symbol of power and strength, it strikes from the first taste; the scepter is the emblem of authority, in the hands of the sovereign, for the special mission that is conferred on him and recognized as the "shepherd of the peoples"; Scepter Noir perfectly embodies this image. He is a triumph in competitions, an attribute of the apotheosis and a guest of honor in ceremonies. It is said that in ancient times Remigio, bishop of Reims, crowning Clodoveo king of the Franks, gave him a blessed barrel full of champagne. This barrel, as long as the king had won in battle and held high the scepter of his people, would never end, and although he drew plenty of it every day, it was always full and Clodoveo was never defeated.
It originates in the estate of Stéphane Coquillette, located in the Montagne de Reims, a hilly area consisting largely of a deep chalky soil that ensures excellent drainage. The vineyards used for this Cuvée have an exceptional southern exposure and enjoy a particular climatic phenomenon: during the night, the warm air created during the day in the highest areas descends towards the valley guaranteeing the perfect ripening of the grapes. The vinification takes place entirely in steel barrels, completing with an aging of 36 months on its lees.
The color is light golden yellow with bright reflections that create particular play of light inside the glass. Elegant, soft and delicate mousse, very fine bubbles, some of which are almost imperceptible to the naked eye. The sense of smell is fascinating and authoritative, an incredible interpretation of Pinot Noir. Initial hints of fresh fruit, especially peach and pear, always present but never intrusive, because accompanied by a strong minerality, as well as small perceptions of dried fruit and honey. It has a mouth that amazes, as well as for the very fine bubbles, for the perfect balance between power and elegant finesse. A triumph of both white and red fruit, accompanied by a pressing progression of toasted and spicy hints. A long, balanced and persistent finish; a pleasant mineral note closes momentum, on a pleasant flavor.
Perfect both for aperitifs of great importance and for the whole meal; excellent with fish and with both raw and cooked shellfish: prawns, mussels, clams. A noble sea or freshwater fish, such as sole or Saint-Pierre, will enhance it in its facets. Oriental and spicy cuisine, with the presence of curry; white and red meats. A special pairing with veal cheek.
