Description

The Bleu Brut from Besserat de Bellefon is an elegant and distinctive Champagne, the result of a selection of grapes from the best villages in the Champagne region, including Avize, Mesnil-sur-Oger, Louvois, Bisseuil, Vertus, Mareuil-sur-Aÿ, Grauves, and Cumières. The cuvée is composed of Pinot Meunier, Chardonnay, and Pinot Noir, representing a perfect balance of freshness, structure, and finesse.

The winemaking process is characterized by the reduced use of liqueur de tirage, a technique that allows for the formation of a lighter and creamier mousse, creating a delicate and persistent effervescence. The absence of malolactic fermentation helps to preserve the wine's freshness and vibrancy. 30% of the reserve wines come from a Solera system, while the aging process takes place over three years on the lees, followed by at least six months of resting after disgorgement.

In the glass, it displays golden copper highlights and a luminous brightness. On the nose, it reveals a rich and expansive bouquet with notes of linden blossom, honeysuckle, hazelnut, and mirabelle plum. On the palate, it is harmonious and well-balanced, with a vinous streak providing structure and depth, while maintaining great mineral elegance.

Ideal paired with smoked duck breast and onion confit speculoos, or with sardines scented with yuzu.
