Description
It evokes the image of the snowy winter panoramas, with the white coat that covers the landscape with a silent and blinding whiteness. The snow, light and impalpable, the air, very cold, which gives off aromas and perfumes near and far. Jeux de Froid intriguingly captures the essence of cold and snow. It is produced in the David Coutelas estate, in the Vallée de la Marne, a soil with a clayey, sandy and slightly calcareous composition, with an optimal exposure to the south in the highest part of a long slope that allows the grapes to fully ripen.
Following an ancient method, it is not filtered, but is placed to rest in the barriques in cellars left open in the middle of winter, when the temperature at night drops several degrees below zero and the cold creeps between the particles of the wine that will soon become Champagne, and the liquid part separates from the solid part which precipitates by natural settling.
Bright golden yellow in color with greenish reflections, it has an elegant and compact mousse, a fine, persistent and continuous perlage. The nose offers a bouquet of perfumes that play on the contrast between the freshness of the floral and fruity notes, with evident hints of white flowers, peach and citrus fruits, in contrast with the complex maturity of the clove and vanilla notes. After a slight ventilation, pleasant sensations of cinnamon open with intriguing smoky aromas. It is characterized by a round, smooth mouth, which expresses all the magnificence of this Champagne. A perfect balance of flavors in the contrast found on the nose which reappears even more evident in the mouth, with a very pleasant and soft acidity that transports towards a long and tasty finish.
A Champagne for important and complex aperitifs but also to be drunk throughout the meal. Perfect with elaborate foods, from the noblest fish accompanied by sauces, to shellfish, to the first courses both on land and sea, to finish with meats with both stewed and grilled cooking. Special combination with buffalo mozzarella and burrata.
