A rosé d'assemblage that refers to the warm tropical coastal waters, to the great coral reef with its colonies that have changed the geography of the seas and oceans. From very distant times man has been looking for coral, as a symbol of beauty and a source of positive energy. Like this precious marine gem, Fleur de Corail gives, with every taste, a strong sense of aggregation and opens up to fulfilling experiences. A convivial Champagne, to be enjoyed with friends to celebrate every moment of your life, to sip on a white beach by the sea at aperitif time or on warm summer evenings.
It comes from the Lionel Carreau estate, in the Côte de Bar, the geologically oldest area of Champagne, characterized by a clayey-calcareous subsoil. In particular we find the soil of Kimmeridge, a geological conformation of the Middle Jurassic era born from the compaction on the seabed, which occupied these areas, of limestone shells of oysters, molluscs and calcium carbonate which has the ability to have a direct effect on the vineyards giving strong mineral and saline notes. The vinification takes place exclusively in steel barrels, with aging on the lees for 24 months.
The eye shows a coral pink color, accompanied by a delicate mousse and a fine, numerous and persistent perlage, with bubbles that create perlage spirals of rare beauty. The perfume is presented on a delicate register of red fruits, raspberries, wild strawberries and gooseberries, with tiny floral notes. Never banal but above all never sweet, as often happens with Rosé d'Assemblage, rather dry and absolutely fresh. In the mouth the attack is frank, immediate and makes us find all the fruity notes of the nose. The caressing and delicate perlage underlines menthol and mineral notes that accompany the harmonious and pure architecture of this wonderful champagne. It closes with a long finish that leaves a pleasant savory note in the mouth, given by the marine residues of the subsoil, which makes you want to drink more.
Ideal for every moment, excellent with both fish and meat barbecues, fresh salmon or ox carpaccio. Accompanies and enhances a duck with cranberries and some fresh soft and medium cheeses. A special pairing with tuna.
