Description

Besserat de Bellefon's Extra Brut Champagne is bold and refined, made from carefully selected grapes grown in the villages of Mesnil-sur-Oger, Mareuil, Bisseuil, Mailly, and Rilly-la-Montagne, in the heart of Champagne. The blend is composed of Pinot Noir and Chardonnay, offering a cuvée that combines power and freshness with complex and deeply elegant notes.

This Champagne is crafted according to the maison's traditional method, which involves a minimal addition of liqueur de tirage to achieve a lighter, creamier mousse. The absence of malolactic fermentation preserves the wine's crisp tension, while the extended aging for eight years on the lees, followed by at least two more years after disgorgement, lends the wine a mature structure and remarkable aromatic depth.

In the glass, it shows an intense yellow color with muted golden highlights. The nose is initially reserved, then unfolds with sumptuous hints of dried fruits, macadamia nuts, currants, and smoky, toasted notes. On the palate, it reveals an embracing complexity with pastry-like tones, a smooth structure, and a lingering, memorable finish.

It pairs elegantly with seafood dishes such as citrus and pink pepper cod tartare or crab terrine with curry cream.
