Valentin Leflaive's Champagne Blanc de Blancs CV is made from Chardonnay grapes sourced from various crus in the Côte des Blancs, including Vertus Premier Cru, Bergères-lès-Vertus Premier Cru, and Cramant Grand Cru. The vineyards, located on clay-limestone soils with craie and with south and southeast exposure, help create a balanced and harmonious profile.
The grapes are hand-harvested, followed by a gentle, fractional pressing that selects the most refined components of the must; fermentation takes place in steel with a proportion of reserve wines, while extended aging on the lees develops complexity, finesse, and a creamy texture.
The wine displays a brilliant golden yellow color and fine effervescence; the nose is expressive, with notes of ripe fruit such as white peach, accompanied by hints of brioche and subtle toasty nuances; the palate is soft and enveloping, with an elegant structure and a fresh finish featuring citrus notes.
Perfect as an aperitif or paired with delicate fish dishes and white meats.
