Crowned "Champagne of the Decade" 2000-2009, ahead of names like Clos du Mesnil by Krug, Dom Pérignon, and Cristal by Louis Roederer, all within the same decade of vintages, the Rare Millésime is the iconic champagne of Piper-Heidsieck, yet another creation of the talented chef de cave Régis Camus.
It is the happy marriage of Chardonnay from the Montagne de Reims and Pinot Noir, sourced from 8 crus in Champagne. The grapes benefit from sunny climates, reaching the perfect stage of ripening. The Rare Millésime is released by the maison after a remarkable 10 years of aging on its own lees.
To the eye, it is pure crystal, with a bright lemon-yellow hue, enlivened by a luminous and persistent perlage. The first aromas detected are reminiscent of honeysuckle, iris, and jasmine. Then come vetiver and exotic woods, enriched by notes of white pepper, ginger, cumin, and a mineral touch that enhances the complexity of this bubble. On the palate, it is silky and smooth, delightful, exotic, superb.
Ideal in the company of refined dishes such as caviar, green curry foie gras, or a carpaccio with white truffle oil.
