Champagne Premier Cru Le Mont Aimè 2005 Pascal Doquet

Champagne Premier Cru Le Mont Aimè by Pascal Doquet is born in vineyards located in the French municipality of Vertus, on the southern tip of the Côte des Blancs, in the heart of the Champagne Ardenne region.

It is produced exclusively with Chardonnay grapes harvested manually in late September. After a slow pressing and a quality fractionation of the juice, the must ferments on the fine lees for 4-6 months. Subsequently the wine ages in oak barrels, before being bottled.

Le Mont Aimè is characterized by a sparkling gold color, with intense brilliant reflections. The nose opens with fine and elegant aromas of citrus and fresh fruit, enriched with hints of orange blossom and almond milk. On the palate it is fresh and sapid, full and succulent. The wine has a mobile body and excellent structure, with a rich aroma.

Perfect to accompany appetizers and aperitifs, it is ideal in combination with fish-based dishes, also elaborate, crustaceans and white meats.
