Where it comes from

Ravoire has operated for generations between the Rhône and Provence with two locations, one in Châteauneuf-du-Pape and one in Salon-de-Provence, testifying to a deep-rooted connection with the land. The Olivier Ravoire line recalls the family history linked to a 16th-century captain, while the name Caparaçon refers to a medieval ornamental armor.
How it is produced
The grapes are hand-harvested and subjected to a short maceration, followed by pressing. Alcoholic fermentation takes place directly in barriques, a choice that contributes to a broader texture. The cuvée then ages in barriques on the fine lees for ten months, thus consolidating body and aromatic definition through consistent use of wood.
