How it is produced
The grapes are harvested by hand between the end of September and the beginning of October, followed by destemming and gentle crushing. The process continues with rapid alcoholic fermentation and a maceration of around twelve days, useful for extracting color and phenolic compounds. After malolactic fermentation, the final blend is created and aged in oak barrels and first- and second-use barriques, thus completing its journey before bottling.
