Description
Dievole's Chianti Classico Riserva Novecento owes its name to the 900 years since the first harvest carried out by the historic Sienese company.
The wine is produced with pure Sangiovese grapes, harvested in early October. Vinification is characterized by spontaneous fermentation, developed in Slavonian oak vats, with the use of indigenous yeasts, at a controlled temperature of 26 ° C for 14-15 days. After the malolactic fermentation, the product ages for about 18 months in unroasted French oak barrels from the noble Allier forests, followed by further refinement in the bottle for at least 6 months.
It shows an intense ruby red color. The nose opens strong aromas of ripe red fruit, enriched with elegant spicy notes that give elegance and complexity in the organoleptic analysis. On the palate it is full-bodied, with well-balanced tannins with excellent acidity and pleasant minerality. In the final it shows a wine of good persistent and bewitching refinement.
A wine with a long life perspective, this Chianti Classico Riserva is perfect to accompany cheeses, game and grilled meat, typical of the Tuscan tradition.
