Description
The Cortese di Oltretorrente is produced in the area of the Tortonesi hills, in Paderna in the province of Alessandria, in Piedmont.
It is made up of 100% of the grape variety of the same name, the Cortese, from vineyards grown organically and biodynamically. The harvest is done manually through the use of small boxes. Alcoholic fermentation takes place in steel tanks, where the wine will stand in refinement on its lees for about 8 months, without malolactic fermentation taking place. Before marketing, it ages for another 3 months in bottle.
At sight it is straw yellow. Its bouquet is fruity and floral, with flavors of peach, apricot and broom. A mineral perception emerges in the nose as well as in the mouth, where it binds to freshness and finishes a very full body.
To be combined with marinated anchovies.
