What kind of wine

Solarco by Livon is a white wine produced in the Collio area of Friuli Venezia Giulia. Made from Friulano and Ribolla Gialla grapes, it is fresh and balanced, characterized by a savory note reminiscent of its hillside origins. The winemaking process involves both stainless steel and oak barrels, maintaining a clear and precise profile. This wine is well suited for both aperitifs and more structured dishes, offering versatility and aromatic purity.

Where it comes from

The grapes come from vineyards located in Ruttars, in the municipality of Dolegna del Collio, at the heart of the Collio in Friuli Venezia Giulia. This area is particularly renowned for the production of white wines thanks to its favorable climate and hillside position.

How it's made

The Friulano and Ribolla Gialla grapes, hand-picked and selected, undergo cold maceration fermentation, partly in Allier barriques and partly in stainless steel at a controlled temperature of 10–12°C. The wine ages for approximately 6 months in the same containers and then in the bottle.

Tasting notes

The wine shows a golden yellow color with intense reflections. On the nose, floral scents of chamomile, acacia blossom, and broom emerge, along with notes of yellow peach and apple; the finish recalls hints of fresh bread and vanilla. On the palate, it is refined and fruity, with a smooth texture and an elegant, floral, slightly savory finish. The balance between acidity, softness, and a light spiciness provides a clean, persistent sip.

Food pairing

This white pairs well with smoked fish appetizers, shellfish, and seafood dishes, thanks to its freshness and savory finish. It also goes well with delicate white meats, where the aromatic notes of Friulano and the verve of Ribolla Gialla enhance light preparations. Locally, it pairs with mildly aged frico friulano and semi-hard cheeses, as well as Alto Adriatico recipes such as boreto alla graisana.

Serving suggestions

It is recommended to serve chilled, in medium-sized glasses, and to consume it within a short to medium period.
