Description
Sauvignon Caligo was born in the vineyards of Conti Formentini, located on the hills of San Floriano del Collio, at over 200 meters of average altitude.
This wine is produced entirely with Sauvignon grapes, harvested and selected only by hand. The harvest is then brought to temperatures below 0 ° C, so as to bring the berries to partial freezing and the formation of ice crystals inside them. This process leads to the breakage of the peel, allowing a greater extraction of aromatic substances. The grapes are then brought back to cellar temperatures and, once crushed, the fermentation phase begins.
Sauvignon Caligo has a light golden yellow color. The nose has a very intense and complex aroma, where herbaceous hints of fig and nettle leaves dominate, accompanied by more delicate notes of melon and butter. On the palate it is fresh, very savory and soft, with a pleasant long and persistent background of exotic fruit.
Ideal in combination with vegetable dishes such as asparagus and artichokes, it is also excellent with fish such as sea bass.
