Description
The Conero Cùmaro Riserva of Umani Ronchi was born in vineyards located in the municipality of Osimo.
It is produced exclusively with Montepulciano grapes, harvested only by hand in the second ten days of October. Fermentation takes place in stainless steel tanks at a controlled temperature of 27-29 ° C for 12/14 days on the lees. Subsequently the wine ages in barrique for 12-14 months, and for further 6-8 months in bottle.
Cùmaro is characterized by a ruby red color, with garnet reflections. The nose opens with an intense bouquet, with fruity hints of plums, black currants, morello cherries, enriched with pleasant spicy hints of black pepper, vanilla and tobacco. On the palate it is soft and enveloping, with smooth tannins and a finish with a chocolatey aftertaste.
Perfect to accompany red meats and game, it is ideal in combination with aged cheeses.
