Description
The Cori Bianco Illirio was born in the vineyards of the emerging Lazio reality of Cincinnato, located near Colle Illirio, from which the name of the wine derives.
This white is obtained from a skilful blend of native grapes such as Bellone, Malvasia del Lazio and Greco, harvested during the second decade of September and selected in the cellar. After a soft pressing, the must is cooled to 8 ° C to obtain a natural settling. Fermented in steel with the addition of natural and selected yeasts, at controlled temperatures. Finally the product is left to rest on the noble lees for about 3 months, during which it develops its organoleptic peculiarities.
Illirio Cincinnato has a straw yellow color with soft golden reflections. The nose offers a rather persistent fruity and fragrant bouquet, In the mouth it shows great pleasure and freshness, with an undoubtedly valid general harmony.
To be tasted in youth, this Lazio white is divinely combined with delicate first courses, fresh vegetables and fish dishes.
