Description
The Corvina Veronese Jèma by Cesari is a red wine made from Corvina grapes grown on alluvial and clay soils in the hilly areas of Valpolicella. The harvest is carried out manually in the last ten days of September, carefully selecting the best bunches. This wine represents the authentic expression of the Corvina variety, typical of the Verona area, enhanced with an elegant and modern style.
The vinification occurs in steel with malolactic fermentation, followed by an initial aging in steel for one year. Subsequently, the wine rests for 18 months in French oak barriques and tonneaux before a further one-year stage in steel, allowing a complex and harmonious evolution of the aromatic profile.
In appearance, it shows a lively purple red color. The bouquet opens with intense scents of red fruits and macerated cherries, enriched with toasted notes and hints of cocoa, coffee, and black pepper. On the palate, it is soft, full, and well-balanced, with a harmonious structure and a long, persistent finish.
Ideal to pair with grilled red meats, game, and aged cheeses.
