Description
Exultet is an elegant interpretation of Fiano di Avellino by Quintodecimo, produced exclusively from grapes grown in a single vineyard in the municipality of Lapio. This cru precisely expresses the identity of the territory, combining complexity and finesse in a white wine of great character. Its name is inspired by the Exultet of Mirabella Eclano, ancient medieval liturgical scrolls that celebrate, among other things, the symbolic value of bees.
Vinification begins with a gentle and prolonged pressing of whole clusters, from which only free-run must is obtained, protected from oxygen and clarified by natural decantation. Fermentation takes place partly in stainless steel and partly in new oak barrels, followed by a four-month aging on fine lees, periodically stirred to enrich structure and complexity.
The color is bright yellow with green reflections. On the nose, it opens with floral notes of linden, acacia, and thyme, while on the palate it stands out for its density and continuity of taste, accompanied by aromas of exotic fruits, candied citrus, and honey, on a slightly mineral background. The balance between freshness and aromatic depth gives elegance and longevity to this wine.
Ideal with baked fish or shellfish, it enhances the refined preparations of Mediterranean cuisine.
