Franciacorta Satèn by Ca’ del Diavolo is a white wine made from Chardonnay grapes using the Traditional Method. It is distinguished by its soft mousse and very fine perlage, which give the glass a creamy and harmonious sensation. The second fermentation in the bottle and aging on the lees for at least 24 months enrich its profile with more complex notes, while the style remains fresh and balanced. This Satèn is pleasant to drink, with good structure and persistence, making it suitable for many occasions.
Where it comes from
This Satèn originates in Franciacorta, with grapes harvested from fifteen vineyards spread across seven municipalities. Local conditions favor marked temperature variations, contributing to the balance between sugars and acidity, while the diversity of soils is reflected in the wine’s mineral freshness.
How it is produced
The grapes are harvested in mid-August, selected by hand and transported in small crates. The Chardonnay grapes undergo gentle pressing and fermentation in stainless steel at controlled temperature. A reduced amount of sugar is added to the liqueur de tirage—characteristic of Satèn—resulting in a finer perlage. The wine undergoes secondary fermentation in bottle with the Traditional Method and matures on the lees for at least 24 months, developing creaminess and aromatic complexity.
Tasting notes
To the eye, Franciacorta Satèn by Ca’ del Diavolo displays a soft straw yellow with fine and persistent perlage. On the nose, floral notes of white flowers, small white-fleshed fruits, and hints of bread crust and toasted almond emerge. On the palate, the mousse envelops, the body remains soft and creamy, the vibrant freshness supports the mouthful, and the finish is harmonious with citrusy hints and biscuity nuances.
Food pairings
The versatility of this Satèn makes it suitable for seafood appetizers such as tuna tartare and steamed shellfish, and for light first courses like seafood risotto and spaghetti with clams. It also pairs well with traditional Lombard dishes such as cotoletta alla milanese and cassoeula brianzola. Excellent with fried calamari and shrimp, it also finds a good balance with fish soup, enhancing the wine’s fresh and mineral notes.
