Description

What kind of wine is it

Cabochon Fuoriserie Brut by Monte Rossa is a Franciacorta Brut, a Traditional Method sparkling wine crafted from a blend of Chardonnay and Pinot Noir. It originates from a selection of the historic crus on the Monte Rossa hill, complemented by a portion of reserve wine that ensures stylistic continuity. The profile is that of a fine and persistent Franciacorta, with minerality and a subtle toasted note.

Where it comes from

The grapes come from the morainic hills of Bornato, in the municipality of Brescia, in Franciacorta, on soils of glacial-moraine origin. The Monte Rossa hill is part of the ring of hills south of Lake Iseo, in an area crossed by air currents between the plain and the lake. The vineyards, with an average age of 24 years, yield the crus Pratone, Barek, Brolo, Palo and Nespoli.

How it is made

Harvesting is manual into crates, with selection of the grapes already in the vineyard. Pressing is gentle and only the best portion of the grapes is used, with each cru vinified separately. The first fermentation takes place in oak barrels between September and February, following the approach that Monte Rossa introduced with barriques as part of research begun in 1985. This is followed by a long aging of over 40 months, which imparts complexity and finesse to the Brut.

Tasting notes

The color is a straw yellow with a very fine and persistent perlage. On the nose, notes of white flowers and ripe yellow fruit emerge, with hints of chamomile. On the palate it shows long persistence and good minerality, with a subtle toasted note on the finish.

What it pairs with

Ideal as an aperitif, it pairs seamlessly with seafood starters, shellfish and fish dishes. Thanks to its freshness and minerality, it also matches delicate risottos and fresh cheeses.

When to serve it

This is a Franciacorta for special moments: a curated aperitif, an elegant dinner or a special toast. Serve in a large-bowled glass to let the complexity of the aromas emerge. The long aging also makes it suitable for keeping in bottle for a few years.
