Description
The Franciacorta non-dosage Èssenza by Clarabella is made from grapes mainly sourced from the “Cascina” vineyard, close to the winery in Corte Franca, in the Province of Brescia. The blend consists of Chardonnay and Pinot Noir.
The vinification process begins with gentle pressing of the grapes, without the addition of sulfur dioxide, followed by static cold settling for 36 hours. The wine ferments 85% in steel and 15% in barrique, with bottling in spring and ageing on the lees for 20–30 months.
It shows a fine and persistent perlage; the nose offers notes of citrus, fresh fruit and yeast. On the palate it is dry, savory and mineral.
Perfect paired with first courses, white meats and fish.
