Description
Contadi Castaldi's Franciacorta Soul Rosé Millesimato is born in vineyards located in the heart of the Franciacorta DOCG.
It is mainly produced with Pinot Noir and Chardonnay grapes, whose harvest takes place between the end of August and the beginning of September. After a short cold maceration and soft pressing of the bunches, fermentation takes place in stainless steel for 20 days. This is followed by partial malolactic fermentation and aging, carried out partly in steel and partly in barriques, for 7 months which anticipates the second fermentation, which takes place in the bottle, with a 50-month stay on its lees.
Soul Rosé is characterized by a bright coppery color. The nose expresses a deep and complex bouquet, with aromas of berries and caper flowers, woven around a delicate spiciness. In the mouth it is crisp and balanced, with hints of pink pepper and red citrus fruits, and a persistent finish on notes of almond milk.
Excellent aperitif, it is able to elegantly accompany all fish dishes.
