Description

What kind of wine is it

Franciacorta Pas Dosé Corte alle Stelle is crafted through a careful blend of Chardonnay and Pinot Noir. Recognized as a Franciacorta, it boasts a dry and rigorous style with a delicate, fresh, and pleasantly savory mouthfeel. Produced in accordance with the rules of the Metodo Classico, it develops a crisp character and remarkable structure thanks to an extended period resting on the lees.

Where it comes from

This Franciacorta originates from hilly vineyards located between the municipalities of Cazzago San Martino and Erbusco, in the heart of Lombardy. The moraine-origin soils, rich in stony components, impart a pronounced mineral footprint that defines the wine's identity. This specific soil composition translates into a tense and linear taste sensation, enhancing aromatic precision without excess.

How it is produced

Production starts with a gentle pressing of the grapes, a crucial step to preserve the fruit’s primary aromas. The subsequent prise de mousse is carried out entirely in the bottle according to the tenets of the Metodo Classico and ensures the development of integrated effervescence. The wine then rests for thirty months on the lees, a key stage that gives olfactory complexity and provides a deep gustatory continuity that is true to the Pas Dosé style.

Tasting notes

In the glass, it displays an intense straw yellow color, crossed by a fine and persistent perlage. The bouquet opens with notes of yellow-fleshed fruit and peach, evolving into a broad finish reminiscent of yeast and custard cream, a clear sign of prolonged contact with the lees. On the palate it is fresh and delicate, closing with a pleasant savoriness that invites another clean, progressive sip.

Food pairings

The pronounced freshness of this wine makes it ideal for pairing with a range of dishes, as it supports textures without overpowering flavors. It finds its best expression with fish-based dishes, crudités, and caviar, and it brilliantly enhances iodized ingredients. Its savory streak and subtle mineral component elevate any menu focused on essential recipes and sea-inspired aromas.

When to serve

Perfect for sharing convivial moments, this dry and rigorous Franciacorta is ideal both as an apéritif and throughout an entire dinner. Its long aging ensures a structure that elegantly accompanies evenings when you want a glass with clean, precise drinkability. The label evokes a starry night and features the constellations of Scorpio, Libra, and Virgo as a seal of its strong identity.
