Description
The Schioppettino Il Soccombente from I Clivi is a red wine from old vines of about 50 years, cultivated in the municipality of Prepotto, in the heart of Colli Orientali del Friuli. The ponca soils, altitude, and southeast exposure provide the wine with freshness and aromatic tension.
The vinification takes place in cement with submerged cap fermentation on native yeasts, followed by 12 months of aging in barrels, half new and half second passage. This enological journey enhances the identity of the grape variety.
On the nose, it is intense and spicy, with notes of red fruit, aromatic herbs, and black pepper. The palate is full and structured, with well-integrated tannins and a lively acidity that gives balance and length.
Excellent with cured meats, stewed game, or first courses with spicy sauces.
