Description

The Gavi of the Municipality of Gavi Rovereto by Michele Chiarlo was born in the homonymous vineyard of Rovereto, located in the Alexandrian municipality of Gavi.

It is made from only Cortese grapes, harvested entirely by hand. A partial maceration of the bunches is followed by soft pressing and then fermentation at a controlled temperature of 16-18 ° C. Subsequently the wine ages for 5 months on its lees in steel and further in the bottle before being marketed.

Straw yellow with greenish reflections, it reveals an intense and elegant aroma on the nose, with hints of white flowers, Golden apple and chives on a pleasant mineral background. In the mouth it is well structured and aromatic, with a long savory and round finish.

It can be combined well with fish carpaccio. It also does not mind seafood first courses and elaborate red meat second courses.
